Pulled pork is one of those slow cooker recipes to keep in your back pocket.  I love me a good slow cooker recipe that has people (mostly T) raving about how awesome it is when I almost feel guilty for the praise because I barely touched it.  Seriously, the most amount of time I spent on this was shredding the meat.  I’m not even joking.  And most of it just fell off in chunks anyway!

Some of the meat near the bone was a little tough, but I left it until after dinner and just picked off what I could after it cooled down a bit.  But even then the majority of the meat was like cutting through butter.  That’s not even an exaggeration, I had trouble taking the meat out of the slow cooker because I thought it was going to slip out of my grasp into pieces.  

I suggest just simply serving this on a toasted bun with some barbecue sauce.  Two of our favorites are KC Masterpiece BBQ Sauce and Sweet Baby Ray’s.  But if you wanted to change it up a little, add in some more Mexican-themed spices in the spice rub, and some finely chopped jalapeno to make this a carnitas recipe!  It’s so versatile. I’ve never actually tried this myself, but a few co-workers at work like to heat up pulled pork and toss it on top of a salad, which could be another way to go!

I have a few other pulled pork related recipes I want to try out this week with our leftovers: a pulled pork BBQ pizza, and a pulled pork biscuit pie!  I’m excited for both, but we’ll have to see how it goes.  I’m really pretty excited for the pulled pork biscuit pie, but I imagine it’s going to take a fair amount of effort to throw together.  We’ll see how it comes out though!

Still, I promise that this recipe is one of those “impress-people-while-doing-little-to-no-work” recipes!  And get a tasty meal out of it!  T even made some tasty roasted carrots to go along with our amazing pulled pork sandwiches.
