Pumpkin, pumpkin, delicious yummy pumpkin! Since Halloween was the other day, pumpkin is on the mind! Surprisingly I’m not a huge pumpkin spice or pumpkin fan, but this pull apart bread was great! It comes together super fast, and had just the right amount of doughiness and sweet pumpkiny flavor. Plus we’re fully into the swing of fall and there’s nothing better than curling up on a blustery day with a slice of warm pumpkiny bread!
Because it’s so simple, this is a great recipe to keep stocked in the pantry and whip out when you need a last minute dessert for guests! Or you know if you need a sweet treat for yourself on a fall Friday night. No need to share if you don’t want to!
Make sure the two stacks at the end of the loaf having the filling turned in so that the bread holds together and doesn’t ruin your pan. You’ll also definitely want to let it sit in the pan for a few minutes to cool like the recipe says so it holds together. Because the mix is moist and lets the bread pull apart easily, it needs some time to firm up and set so it doesn’t just fall apart.

Ingredients
- 1 16.3 oz can biscuit dough
- 3 Tbsp sugar
- 1¼ tsp pumpkin pie spice
- 2 Tbsp butter melted
- ¾ cup canned pumpkin pie mix
Optional Icing
- ½ cup powdered sugar
- 2-3 tsp milk
- 1 tsp vanilla
- ½ tsp pumpkin pie spice
Instructions
- Line a 9” x 5” loaf pan with parchment paper and spray with cooking spray.
- In a small bowl, mix sugar and pumpkin pie spice.
- Separate biscuit dough into layers. Separate into at least 8 or more layers.
- Brush each biscuit layer with melted butter, then top with pumpkin pie mix and sprinkle with the sugar-spice mixture.
- Stack biscuits into 4 piles, and then place into the loaf pan, making sure to keep sides without filling on both ends.
- Bake 30-40 minutes until loaf is deep golden brown and center is baked through. Allow to cool 10 minutes before removing from pan.
Optional Icing
- Mix together ingredients and drizzle on warm loaf before serving.

Pumpkin dough layered with more pumpkin, cinnamon, spices, and brown sugar what s not to love? After making this recipe, I was reminded why I love pull-apart bread so much. It s hard to beat flakey layers packed with delicious seasonal flavor.
