If your first thought is that these look a lot like my previous cake batter chocolate chip cookies, you would be right! The differences are subtle, but they are different. For one, the cake batter chocolate chip cookies are quite a bit more like chocolate chip cookies than these, which I would compare more to extra vanilla-y sugar cookies. However, they definitely do look quite similar, especially with the sprinkles throughout the cookie dough. Give both recipes a whirl, and let me know how they compare! (Yes, I am telling you to eat more cookies.)
I’d definitely throw this recipe in the standard arsenal recipe box. It’s great to stock up on pudding mixes and just keep them around for these cookies, since the other ingredients I nearly always have around. And I would also love to try it with some different pudding mixes and see how it changes up the flavor profile. I’m not a huge fan of pistachio, but that could be interesting, especially if you threw in some chopped pistachios. I might skip the banana-flavored, because at that point you might as well make banana cookies with real bananas. I’m not sure what other flavors of pudding there are, those were just two that sprang to mind.
I do love how soft and chewy these cookies are, they’re definitely a “softbatch” cookie. Gonna bring them into our new work office tomorrow to break in the new office to my baking! I was supposed to go today, but thanks to the 2.5 feet of snow, and the fact that T and I spent several hours yesterday shoveling out our driveway, and at 7pm when our complex decided to shovel out the rest of the main roads, left a giant pile of snow deposited at the base of our driveway. I know that VA isn’t the best equipped to handle snow, but I did think that one of the benefits of living in an apartment complex was that they would help with these things and not be dumb about it. Well, apparently I was wrong.
