Fish, and salmon specifically, always makes for a great date night meal! This recipe is a mouthful (pun intended). But once you take that first bite, you’ll see just how delicious this lemon butter salmon is. Topped with sautéed spinach, crumbled bacon, and a sprinkle of blue cheese, all the flavors blend melodiously. It’s such a delicious blend of flavors. I don’t know that I would have put them all together, but thanks to Bonefish Grill, I just had to try making this recipe at home. And now I can have it any time I want!

The key to any fish meal is going for freshness. It can be expensive, but you’ll be surprised at just how much of a difference it makes to get fresh fish. We found a local seafood distributor last year at a farmer’s market, and let me tell you, the filets we got from them…*chefs kiss*. Unfortunately their store is far enough away that we don’t go often, especially since we no longer frequent farmer’s markets during COVID. But if all you can get to is your normal grocery store, I promise this recipe for lemon butter salmon will still deliver! It’s chock full of delicious flavors.

The key to making lemon butter salmon at home is timing. There’s a lot of moving parts, and you don’t want to get overwhelmed. If you’re not like me and don’t get overwhelmed easily, you can get two pans going at a time, but that also means more dishes. So assuming you’re lazy like me, you’ll want to go in the right sequence. Start off with crisping up the bacon since that takes a few minutes. Make sure you go for crispy because you want to be able to crumble bacon over the spinach. Then move on to sautéing the spinach. The pan will still be coated in delicious bacon fat, and the spinach will soak up all that goodness.

Then move on to the lemon butter sauce and move it to the side. The last step is cooking the salmon itself. We leave the salmon for last to make sure it’s delicious and crisp and warm right before you serve it. You can always heat up the spinach and the sauce in the last few minutes by adding them back to the pan, but you don’t want to serve cold salmon! Make sure you remember to top with crumbled bacon and that ripe blue cheese for the full effect.

Secrets to Success

  • Timing is everything! Make sure you’ve prepped all the ingredients so you can move quickly from step to step.
  • You’ll want to follow the recipe and do things in the proper order. Start with crisping the bacon, then move onto the spinach and lemon butter sauce. Leave the salmon for last so it’s piping hot and warm when you serve it! It’s easy to heat up the toppings as needed toward the end.
  • Serve this with roasted vegetables, or a rice pilaf or some noodles so you have something to sop up the extra sauce. It’s delicious, you’re going to want to have something to get that extra sauce to your mouth.

Ingredients

Lemon Butter

  • ½ cup dry white wine (I like sauvignon blanc, but chardonnay can also work too)
  • 3 Tbsp lemon juice
  • 1-2 tsp cornstarch
  • 10 Tbsp unsalted butter

Salmon

  • 4-6 Tbsp crumbled bacon (approximately 6-8 strips)
  • 2 cloves garlic, minced
  • 4 cups raw spinach
  • 4 8 oz salmon portion
  • 8-12 oz blue cheese
  • 3 Tbsp olive oil
  • salt & pepper

Instructions

Lemon Butter

  • Add the wine and lemon juice to a large pan, and simmer for approx 10 minutes or until reduced by half.
  • Add a small amount of cornstarch. Start with 1 tsp and whisk to thicken. Add a second tsp as needed.
  • Add the butter, and whisk/stir until melted and incorporated.

Salmon

  • Cook bacon and get nice and crispy. Remove to a paper towel-lined plate to drain.
  • Dispose of the majority of bacon grease, leaving a little in the pan. Add the garlic and a pinach of salt to the pan and cook 30 seconds until fragrant.
  • Add the 4 cups of spinach to the pan and sautee until wilted. It may not all fit in the pan all at once, so you can start with 1 or two cups and add the remaining spinach as the others begin to wilt. Remove to a plate.
  • Season salmon filet with salt and pepper. Add a splash of olive oil to the pan, and add the salmon filet, skin side up. Cook for 6 minutes, then flip and cook for 4 minutes on the other side.
  • Remove salmon to serving plate. Top each filet with sauteed spinach, and ladle lemon butter sauce over top. Sprinkle with blue cheese and crumbled bacon and serve warm.
