So we made individual garlic monkey breads as a quick side to caesar chicken tortellini the other other night!  They were quite tasty, and simple to boot, considering I pretty much always have some biscuit dough floating around in my refrigerator.  At the grocery store I had only been focused on picking up ingredients for the tortellini, so side dishes didn’t really cross my mind.  But I got home and was thinking, you know what goes great with caesar salad and tortellini?  Garlic bread!   But alas, no fresh crusty bread, so what’s a girl to do to get her garlic fix?

I knew I had some biscuits in the freezer and you always see recipes for monkey bread, so I pinterest-ed (is that a real verb?), and voila, one of the first options was individual garlic herb monkey breads which was exactly what I wanted.  Normally I hate breaking out the muffin pan for things that are going to stick to the cups, but in this case, since the dough is basically soaked in butter before baking, no need to line or grease the pan!

I used three cloves of garlic for these, and you could taste the garlic.  As it should be.  But I mention it because the particular head of garlic I used has been yielding about 1+ sq. inch per garlic clove, which is not usually the case I’ve found.  So adjust according to your tastes!  And cheese makes everything better, so don’t forget that!  I used flaked parmesan crumbs, but shredded, or even powdered would work fine.  I prefer shredded or flaked though, because of the way it crisps up.

I imagine that you could make one giant monkey bread out of the same ingredients if you so desired, but there’s something about having individual ones that just makes it cute / more appealing.  I do wonder what a pile of garlic monkey bread would look like though … might make for a great appetizer!  Check out the recipe below, adapted slightly from Chungah’s recipe from damndelicious!

Ingredients

  • 1 16 oz can refrigerated biscuits
  • ¼ cup unsalted butter, melted
  • 2 Tbsp freshly grated parmesan
  • 4 cloves garlic, minced
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp dried parsley
  • pinch of salt

Instructions

  • Melt butter in a medium-sized microwave safe bowl. Meanwhile, cut each biscuit into 9ths, making a 3 x 3 grid.
  • Add the herbs, garlic and parmesan to the butter. Whisk together until combined.
  • Place biscuit dough pieces into bowl and toss to coat. (I find the easiest way to keep the pieces from mashing together is to use my hands.)
  • Evenly distribute dough throughout cups of a 12-muffin pan.
  • Bake in pre-heated oven 8-15 minutes, or until done.
