This light and refreshing Halloween cocktail has a kiwi twist—popping kiwi bubbles! This kiwi mojito is a perfect refreshing drink to make for your spooky guests! With fizzing lemon lime soda, muddled mint and a splash of rum, this Halloween cocktail is delicious and easy! The mint leaves float like little lily pads and little kiwi bubbles look like caviar or “frog eggs” and add a literal burst of flavor to your drink!
Ever heard of popping bubbles? If you haven’t, let’s back up: have you heard of bubble tea? It’s a drink that includes some sort of chewy topping. Traditionally milk tea is served with sweetened tapioca balls. These mildly sweet chewy balls can be sucked up through a wide straw with the milk tea. It makes for a tasty, albeit odd drink.
But bubble tea has expanded to more than just tea—you can get smoothies, coffees, slushes. And more than just tapioca balls (boba, pearls, bubbles—there’s plenty of names for these) there’s also other things to enjoy in your bubble tea. There’s jellies and red beans, and yes—popping bubbles.
These bubbles are different than the original tapioca pearls pretty much in their entirety. These bubbles are smaller and have a thin film holding in a burst of flavor. You can find many different flavors. I’ve seen coffee, Korean yogurt, and pretty much any fruit flavor possible. Raspberry, green apple, mango, and passion fruit to name a few. I chose kiwi, but pretty much any green flavor would do! Green apple might be another good choice if you prefer apples.

As for the cocktail itself–I love a good mojito. The key? Fresh mint. There’s just no substitute for it. Paired with mint and lime and lemon lime soda, it’s just so refreshing. It needs to be made fresh, but as far as cocktails go, it’s pretty simple. Which makes it an ideal party drink. I recommend mixing up a pitcher full of the liquid and setting out the popping bubbles separately. This way, depending on how adventurous your guests are, they can add their own flavor pearls. They can even add a splash of the green juice the popping bona are stored in for some extra kiwi-ness.
The best part of these Halloween cocktails is that I provide options to make them mocktails so everyone can enjoy, even your designated drivers, kids, and those who chose not to imbibe! For this kiwi mint mojito it’s easy–just leave out the rum. Simple as that. Enjoy!

- The key to this halloween cocktail is the frog spawn–AKA green popping boba! To make this kiwi mojito obviously you’ll want to go with kiwi flavored popping boba. But green apple is another option if that’s your flavor of choice!
- Fresh mint simply makes a mojito. Make sure to muddle it real good for optimal minty flavor.
- For extra kiwi flavor, mix some of the juice the boba are stored in, into the cocktail itself. It’ll give a green tinge to your mojito but will bring the kiwi flavor to your first sip, instead of waiting to pop the boba.

frog spawn kiwi mojito;
Ingredients
- 10 leaves mint
- 4 oz lemon lime soda
- 1.5 oz white rum
- 1 Tbsp popping kiwi boba (or other green flavor)
Instructions
- Reserve one or two mint leaves for garnish. In a glass or shaker, add the remaining mint leaves and muddle using a muddler or flat end of a wooden spatula. Mash until the oils are released and some of the leaves are broken up.
- Add 6oz lemon lime soda and 1 shot (1.5oz) white rum. Optionally add 2-3 tsp of liquid surrounding the kiwi bubbles for extra kiwi flavor. If using a shaker add ice and shake, otherwise stir together until combined.
- Add 1 Tbsp popping kiwi and garnish with mint leaves and kiwi as desired.
