This frog spawn Halloween cocktail is light and refreshing, and only takes a few ingredients. The star of the show here are kiwi popping boba that are (fully edible) “frog spawn”. The kiwi mojito base is perfectly refreshing for your spooky guests! Fizzing lemon-lime soda, muddled mint, and a splash of rum make the delicious base for this recipe. The mint leaves float like lilypads, and the kiwi boba “caviar” adds a literal burst of flavor to every sip.

One quick omission can make this frog spawn Halloween cocktail a mocktail!

Are you familiar with popping boba? Since they’re the stars of the show, let’s back up. Are you familiar with bubble tea? Also known as boba tea, this drink has bubbled (see what I did there?) up in popularity in the past 5-10 or so years. It’s a drink, traditionally tea, that includes some sort of chewy topping.

The classic is a milk tea with sweet tapioca pearls, which are chewy, slightly smaller-than-marble-sized pearls. You need a wide straw to drink the boba and the tea. Of course, as it’s gained popularity, the flavors and varieties have expanded to slushes, warm and cold drinks, jellies, red bean, and popping boba, to name a few.

You can find popping boba in a variety of flavors. I love this kiwi mojito flavor combo, but green apple could be another option.

Popping boba, while still called boba, is significantly different than its tapioca counterparts. These bubbles are smaller and have a thin, jelly film holding in a liquid center. The center is a burst of flavor, and you can get a variety of flavors. For this frog spawn cocktail, I used kiwi boba because I wanted to make a kiwi mojito. But you can find popping boba in a variety of flavors: coffee, Korean yogurt, raspberry, mango, passionfruit, you name it. You can also sometimes find a green apple flavor if you prefer to use that in your frog spawn cocktail instead.

When it comes to a mojito, the key is fresh mint. There’s just no substitute for it. It’s so refreshing, and you just can’t get the same fresh and cooling flavors with syrups and alternatives. So this frog spawn cocktail does require muddling the mint fresh, but all in all, it’s pretty simple, so I don’t mind.

To streamline party prep, mix up a pitcher of the kiwi mojito sans popping boba, and fill individual glasses with the “frog spawn”.

If you are looking to streamline your party prep, I recommend mixing up a pitcher of the cocktail sans popping boba and only add the boba right before serving. I typically do this by setting out glasses with a hearty spoonful of “frog spawn” in each glass ahead of time. Then let your guests pour drinks from a pitcher of the cocktail.

This makes sure there are boba in every glass, and keeps folks from rooting around or over-pouring cocktails trying to get to the boba on the bottom of your pitcher. If you have some guests that are less adventurous, it might also let them try a boba or two before committing to the full glass.

To amp up the kiwi flavor even more, you can add some of the liquid that the popping boba come in. It’s basically the same or similar liquid to what’s inside the boba themselves, so it has lots of kiwi flavor. It will tinge your mojito green a bit, so just be aware. I like the visceral effect of the clear “water” to see the boba, but you might want that extra kiwi flavor.

Bonus tip: for extra kiwi flavor, add a spoonful of the liquid the popping boba come in.

The best part of this frog spawn cocktail is drinking it of course! But all of my Halloween cocktails are delicious and most of them can be easily made mocktails so everyone can enjoy, even your designated drivers, kids, and those who chose not to imbibe!

Ingredients

  • 10 leaves mint
  • 4 oz lemon lime soda
  • 1.5 oz white rum
  • 1 Tbsp popping kiwi boba (or other green flavor)

Instructions

  • Reserve one or two mint leaves for garnish. In a glass or shaker, add the remaining mint leaves and muddle using a muddler or flat end of a wooden spatula. Mash until the oils are released and some of the leaves are broken up.
  • Add 6oz lemon lime soda and 1 shot (1.5oz) white rum. Optionally add 2-3 tsp of liquid surrounding the kiwi bubbles for extra kiwi flavor. If using a shaker add ice and shake, otherwise stir together until combined.
  • Add 1 Tbsp popping kiwi and garnish with mint leaves and kiwi as desired.
