With fall right around the corner, this is the ultimate comfort food to keep in your arsenal.  Chicken and stuffing, and even green beans so that you have a full meal right out of the crock pot!  It’s basically a variety of thanksgiving, but since it’s chicken and all, you won’t be encroaching on the traditional meal, so you can rest easy.  Plus there’s that whole set-it-and-forget-it aspect, as well as the fact that crock pots are the best aromatic around for your home.

Stuffing ingredients for Crockpot Chicken and Stuffing @ bestwithchocolate.com

This is a simple recipe, with a whole 6 ingredients, but since one of those is water, it doesn’t count.  It’s actually the first time I’ve used the from-box stuffing, because at Thanksgiving my mom traditionally makes her own!  Back when we did larger Thanksgivings with the extended family, she would even make two kinds–the crunchy and the mushy because my grandfather liked the dry and everyone else liked the mushy kind.  I think the “mushy” is what most people think of when they think stuffing.  Now that a lot of the kids are grown up and there’s so much extended family, we don’t always get together for Thanksgiving like we did in the old days.

One of the best things about this recipe is that the chicken comes out amazingly tender and moist because the stuffing keeps in the beautiful juices.  The stuffing mix is easy but still tasty, and I swapped out greek yogurt for the sour cream from the original cozy cook recipe, as I’m apt to do.  I’ve left the water there as well, although with the frozen green beans and the moisture in the stuffing, I actually probably should have left out the half of the water that I dumped in toward the end.  There were already some juices on the bottom.  The water definitely didn’t hurt, but wasn’t really necessary either.  And lastly, I think this would work great to swap out vegetables to suit your family’s needs!  Try some corn, or peas (if you like them mushy green things), and let me know how it turns out!
