In fact, if you’re feeling up to it, make both buckeye pretzel bites and cookie dough pretzel bites. They would be perfect for a potluck or quick snacks throughout the week. If you specifically want to make pretzel bites ahead of when you want to serve them, I actually recommend the OG buckeye pretzel bites.
These cookie dough pretzel bites are delicious and will last for a day or two, but they have more moisture (as opposed to the oil in peanut butter) that causes the pretzels to go stale slightly faster. Still, that assumes that they’ll make it without being eaten enough to become stale! And they really aren’t bad stale, if I do say so myself.
You can have fun with your pretzel bites. I decided to sprinkle some with flaky salt, but why stop there? Try some sprinkles for a fun, festive flair, or change up the chocolate. White chocolate-dipped cookie dough pretzel bites with some red heart sprinkles would make for a fantastic Valentine’s Day snack!
You don’t need to worry about the health risks of eating raw cookie dough–this recipe is eggless. All the important flavors are there, but we don’t want to add eggs when we’re not planning to bake the cookie dough. Eggs can contain salmonella and can cause an upset stomach if bacteria is present. Luckily with these cookie dough pretzel bites, there’s no need to worry!
Besides, that means you get to indulge in “quality control” and snack on the dough with no guilt! Though I’ll be the first to admit that I sample my own cookie dough on occasion (egg or not). But for this recipe, it’s just butter and sugar and chocolate chips and all things delicious!
I love the way these look because they’re so cute and bite-sized! Everything is better bite-sized. You can skip the chocolate dip altogether if you prefer. However, if that’s the case I suggest freezing or at least refrigerating the sandwiches before serving so they’re not a squishy mess of cookie dough. The chocolate dipping helps hold them together, and how can you ever have too much chocolate?
You can use whatever pretzel shape you want so long as it’s got some area. I use “snaps” pretzels (the ones that look like little window panes) often for my buckeye pretzel bites. But Amber over at Dessert Now, Dinner Later used regular pretzels.
This time around I wanted to make these entirely gluten-free so I used both gluten-free pretzels and gluten-free flour. And there’s a more limited selection of gluten-free pretzel shapes. But luckily the standard mini pretzels work great and even remind me of little hearts if you look close enough.
The most recent time I made these cookie dough pretzel bites I shared them with my co-workers, but I have to admit the previous time I made these, they didn’t even make it to work. Between me and my husband (boyfriend at the time), my husband magnanimously helped with the hard work of eating these. I still need to fit into a bridesmaid dress in September, but I couldn’t resist sneaking one of these bad boys almost every night. So worth it. Life’s no fun if you take the food out of it!

Ingredients
- ½ cup butter
- ½ cup brown sugar
- ¼ cup sugar
- 2 Tbsp milk
- 1 tsp vanilla
- ¼ tsp salt
- 1¼ cup flour (can also sub gluten-free flour)
- ½ cup mini chocolate chips
- 60 pretzels (remember to use gluten-free if desired)
- 1 cup semi-sweet chocolate chips
- 1 Tbsp vegetable shortening, or sub coconut oil (optional)
- flaky salt (optional)
Instructions
- Line a baking sheet with wax paper, parchment paper, or a silicone liner. This will give you a flat surface to lay each pretzel bite on.
- In a medium bowl, add the ½ cup (1 stick) softened butter, and add ½ cup brown sugar and ¼ cup sugar and cream together.
- Add ¼ tsp salt, 1 tsp vanilla, and 2 Tbsp milk and mix together. Add 1¼ cup flour to the mixture and mix until it forms a thick and not sticky cookie dough.
- Add ½ cup mini chocolate chips and fold in, stirring gently to evenly distribute the chocolate chips.
- Take roughly 1 tsp – 1 Tbsp of cookie dough mixture and roll into balls. Sandwich between two pretzels and remove any excess. Place on the lined baking sheet and repeat for remaining pretzel bites.
- Optional: Refrigerate pretzel bites for 30 minutes or freeze for 15 minutes. This will help keep them together when dipping in chocolate.
- Add 1 cup chocolate chips to a microwave safe bowl. Microwave in 30 second increments, stirring between each zap. (Optional) If melted chocolate is too thick, add vegetable shortening or coconut oil to taste to thin the chocolate.
- Dip each sandwich in the melted chocolate, then set on the baking sheet. Sprinkle with flaky salt if desired.
- Allow 30-90 minutes for the chocolate to set. Best served within 24-48 hours. Because of the moisture in the cookie dough, they'll begin to get stale after a day. Store in an airtight container in the fridge.
