It’s pretty rare that I make a recipe from scratch. Most times I just browse pinterest until I’m drooling then pick the thing that is most drool-worthy that day. But these chicken burgers are quite tasty, and I’m pretty proud of them. Even more so because I snuck a veggie into the burger. Plus with homemade pesto, I feel like it’s complete.
Making pesto feels so summery to me. Those big basil plants, snitching a few toasted pine nuts that cost way too much but are way too tasty. I use basil mostly, although sometimes I throw in some parsley if I’ve got too much growing beside it. And lots of parmesan cheeeeeese. Have I mentioned I like cheese? Because I do. A lot. chicken pesto burgers;
Ingredients
- 1 lb. ground chicken
- ¼ c. pesto
- ¼ c. cooked corn
- 3 cloves garlic
- buns for serving
- cheddar cheese slices for serving
- tomatoes for serving
- spinach or lettuce for serving
Instructions
- Fold together chicken, pesto, corn kernels and pressed garlic, being careful not to over-mix. Form 6 patties.
- Grill or fry burgers to desired doneness, approximately 8-12 minutes
- Toast buns and apply toppings as desired. Recommended toppings: cheddar cheese, tomato slices, spinach, ketchup
