    Onto the third recipe in my series of mini cheesecakes!  I’ve really been on a dessert kick…with these four recipes, Monday as  and before that cookie dough icing brownies and reverse strawberry shortcake.  I hope I’m helping to fatten you up for the cold winter ahead!  But first we gotta get through fall.  I say “get through” as if fall isn’t my favorite season!  Autumn leaves, crisp sweater weather, walks with the pup, and all those fall recipes…what’s not to love?     I just love the idea of a cheesecake base that’s adaptable to so many different flavors!  Here’s the third in my four part series, because who doesn’t love cookies and creme???  It really could be called oreo cheesecake as well, but cookies and creme now reminds me of one of my all-time popular recipes: cookies and creme cookies!  So of course we need it in cheesecake form!     Let me just start this off answering the question on everyone’s mind–yes, this recipe is everything you want it to be!  Another adventure stemming from my coworkers, though this time from a birthday rather than fresh-from-the-garden produce like baked jalapeño poppers.  Since I like cooking and baking (whaaaat), a coworker’s birthday is always the perfect excuse to try out a new recipe!  I do ask for a category or a few examples of what they like so that I have a starting place.     In addition to banana bread, here’s another way-past-ripe bananas recipe to add to your repertoire!  Though you do need a doughnut pan for these.  I prefer baked doughnuts since they’re “healthier”, but more so because they don’t involve heating up oil and frying things.  I always feel like I’m being wasteful with the leftover oil, and besides, it also makes my house smell of oil for like a month.  (I might be exaggerating a leeeeetle.)
