In addition to banana bread, here’s another way-past-ripe bananas recipe to add to your repertoire! Though you do need a doughnut pan for these. I prefer baked doughnuts since they’re “healthier”, but more so because they don’t involve heating up oil and frying things. This is a nice, clean, vegetarian recipe! It’s super easy to make, and would also make a great side, although we ate it as the main dish tonight. It is definitely a little on the light side for a main meal, but was still super tasty. It’s got a variety of vegetables and a nice Mediterranean flair. If your first thought is that these look a lot like my previous cake batter chocolate chip cookies, you would be right! The differences are subtle, but they are different. For one, the cake batter chocolate chip cookies are quite a bit more like chocolate chip cookies than these, which I would compare more to extra vanilla-y sugar cookies. These are yum and fun to pull out! I found that the recipe I used (see below) was actually a bit sweet, and judging by my taste-test of the batter, I think the cookies lost some of their cake-batter-ness with the addition of the sugars. No, I didn’t eat 4 cookies worth of dough … >.>. Shhhhh. Next time I think I’ll try leaving out the sugar.
