Happy New Year, and a new year deserves a chocolatey close to the last year, right? Except that we’re already almost done with February, whoops. Time just gets away from me, especially around the holidays. But I figure there’s never a bad time for a round-up of truffles recipes! Every holiday season I always have to have a mix of old classics and try out some new ones in the hopes of finding some new faves. They’d also be great for Valentine’s Day if you want to put a little homemade spin on the traditional chocolate gifting in February. Here’s the wrap-up for this year to keep track of this year’s round of chocolatey noms!

Also disclaimer, the “turkey butt” in this photo is my best friend, it’s an inside joke made from a thanksgiving + butt joke. Yes, I’m very mature for a 28 year old, thank you very much <3.

  • [New!] s’mores truffles; It took a little tweaking to get the perfect combo, but I liked how they turned out.
    • Suggest Golden Grahams instead of plain graham crackers and make sure you don’t over compress the centers, otherwise they can be a little dry (but still delicious)!
    • Also next year I think it would be super cute to top with mini hot chocolate marshmallows, although I do think the white and milk chocolate topping is cute and professional.

[New!] red wine truffles; We used a Pinot noir from our New Zealand honeymoon and it was amazing!

It’s definitely a subtle flavor but I liked the texture of the ganache for a molded truffle because it was a little softer than some others.

  • [New!] pecan pie truffles; Toasty pecan flavor packed into an amazingly satisfying bite!
    • Easy, pretty quick and delicious! I definitely made my filling balls too big and they dwarfed some of my other truffles. Still delicious but keep size in mind if you’re planning to make an assortment.

raspberry chambord truffles; These babies are definitely my go to for personal snacking. They’re soooo good. And bonus, they don’t require chocolate coating so they’re simpler and less time consuming.

Couple tips, don’t add more liquor or jelly than the recipe calls for otherwise they’ll be softer and can deform and sag over time. You can counteract that by rolling balls and letting them dry out a little in the fridge for several days before coating in cocoa powder, but it can be a long process.

caramel truffles;The ones that started it all. This year I found a trick to cleaning the molds and had pretty good success all around with this new cleaning method to prevent bloom, or that white sheen on chocolate.

Wipe your molds with rubbing alcohol! Just make sure to let it dry completely as well. I usually still boiled the molds with hot water first, then wiped them down. Additionally allow molds to solidify at room temperature and then remove from molds immediately after setting.
