What’s the formula for a tasty dinner? Broccoli, spicy chicken, alfredo sauce, cheese, and some giant pasta shells! Really, this recipe has it all! Protein, veggies, pasta, and of course no meal is complete without cheese! Plus, added bonus, all you need to do is leave out the chicken and you have yourself an equally tasty vegetarian meal!
Life has been a little crazy lately, but we’ve finally decided on a venue for the wedding! It’s such a weight off to have a date picked out, and can get down to some of the less-stressful details, although I’ll bet I’ll eat those words soon enough. But in the midst of the stress, this is a home run recipe, because it’s a full meal wrapped into one!
Plus a little pro-tip: cook up some extra chicken and save it, perfect for tossing into quesadillas, a chicken salad, or a pot pie later in the week! I personally put a little too much cayenne on the chicken this time around, but I do like to add a little bit of heat to alfredo. I feel like it gives it a little complexity. I did adjust the amount on the recipe card below, but feel free to amp it up because we all know I’m a spice wuss.
As with all my recipes though, feel free to improvise! If you’re not into the spice thing, leave out the cayenne. Plus, this is a great recipe to make ahead. Stuff the shells, and cover them until ready to bake. Just make sure when you heat it up to heat it all the way through!
