A hot and steamy english muffin stacked with cheesy eggs and bacon, perfect for on-the-go breakfast! Meal prep breakfast sandwiches are perfect to make ahead in bulk and make your life easier. There’s something so classic and homey about a breakfast sandwich. They’re so satisfying to start your day with and keep you fueled throughout the morning.

Because this recipe for meal prep breakfast sandwiches is so simple, it’s ripe for customization to your personal preferences. For example, if you want an extra burst of healthful grains in the morning then grab a multigrain english muffin. Or if you’re plagued with IBS like me, grab a gluten-free option.

Or replace the english muffin entirely, and swap in a bagel! Though bagels are significantly bigger in circumference, so you’ll have to account for that in your output. I’d expect probably to make 3 if you’re using standard size bagels instead of the 6 english muffin sandwiches.

Make your meal prep breakfast sandwiches your own! Try swapping out bacon for sausage, or for some healthful options, try turkey sausage or even sliced turkey. Try a multi-grain english muffin, or go for a bagel instead!

Then comes protein. I used pre-cooked microwavable bacon that I got from Costco. This means it’s already prepped, cooked, and prime for deliciousness right out of the microwave when you heat up your meal prep breakfast sandwiches. But you could also use sausages, or any other breakfast meat you prefer. Even something like sliced turkey would be a delicious, low-fat alternative option. Or compromise and grab some turkey sausage links to still keep that breakfast feel.

I like upping the flavor profile and nutritional value of these meal prep breakfast sandwiches with extra sautéed veggies.

My favorite go-to for adding in veggies is peppers and onions. But I’ve also tried broccoli or spinach for delicious and nutritious results. Can’t go wrong with some extra greens in your diet, that’s for sure.

And lastly, the eggs! In my opinion, cheese is king! Pick your favorite, I usually default to a cheddar blend because the sharpness really goes well with these breakfast sandwiches. But I’ll also use colby jack for a milder flavor sometimes to change it up. Grab that pre-shredded for quick and easy, or get fancy with it and grab slices or a sharp aged cheddar.

Keep in mind that you’ll be microwaving these sandwiches so you want to keep the eggs from getting overdone. They have to be firm enough to hold together in the sandwich, but you actually want them to be soft and fluffy going into the freezer so they don’t become over-baked and rubbery in the microwave. So keep an eye on your eggs in the oven and take them out of the oven just after the center sets.

Ingredients

  • 6 eggs
  • 10 strips precooked microwaveable bacon
  • ½ cup shredded cheese (of choice)
  • ¼ cup milk
  • 1 Tbsp butter + more for greasing pan
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp mustard powder
  • sautéed veggies as desired (e.g. peppers & onions)
  • 6 English muffins

Instructions

  • In a large bowl add the eggs, milk and 1 Tbsp melted butter and whisk together.
  • Add in the seasonings, 1 tsp salt, ½ tsp pepper, ½ tsp mustard powder and whisk until evenly distributed.
  • Add the ½ cup shredded cheese and mix together. If using sauteed veggies, add them as well
  • Grease an 8”x8” pan and pour egg mixture into it.
  • Bake at 350 for 20-30 minutes or until cooked through. It may puff a little—if you’re worried about overflow, just poke it with a knife and release any trapped air.
  • Remove eggs from oven and allow to cool.
  • Meanwhile, slice English muffins in half. Also slice bacon strips in half.
  • Assemble the sandwiches.
  • Cut the cooked egg into 6 rectangles.
  • Place one egg portion onto the English muffin half, add the bacon, and top with a sprinkle of extra cheese as desired.
  • Wrap individually and keep refrigerated or freeze for up to a week.
  • To heat from fridge, microwave on high for 45 seconds. From freezer, microwave on defrost setting for 1-2 minutes, then 45-90 seconds.
