Brie en croute may sound fancy, but it’s a snap to make. A melty medley of cheese, jam, and puffed pastry? Sign me up! This appetizer is perfect for any table, and always a crowd pleaser!

I think it might be one of the earliest recipes I remember making on my own. For something with a fancy French name, it’s surprisingly simple and extra delicious. En croute means “in a crust,” and to the culinary world, that generally means wrapped in pastry dough and baked. Think Beef Wellington, similarly known as “filet de boeuf en croute” to the French. So Brie en croute–you guessed it! Means Brie wrapped in pastry dough.

It’s not quite as simple as cheese and dough, though. We also add jam. The key to a delicious brie en croute is good-quality jam. This recipe is simple, so the ingredients shine on their own, and you can really taste the quality. My go-to is Bonne Maman, but use whatever brand suits your fancy. I love how much intense fruit flavor is in their jams.

Use whatever flavor your heart desires, though I’m partial to raspberry jam myself. Usually I go for strawberry or raspberry. Personally, I’d throw blueberry jam into the mix, but my partner isn’t a huge fan, so I stick with what we both love. I’ve also used some interesting gourmet flavors like blackberry thyme, or peach vanilla, and I’ve never had a brie en croute I didn’t like!

Smear the jam on the puff pastry liberally. You want it to encompass the cheese entirely. I typically spread some down on the pastry sheet, place in the cheese wheel, and add more jam on top. I really want the jam in every bite since it perfectly complements the cheese in brie en croute.

Do make sure the puff pastry is fully thawed in the fridge and ready for use. Since you’ll be folding up a square of dough onto a round brie wheel, make sure you have enough pastry to seal the cheese inside. You’ll want to pinch together the seams well so it keeps the ooey-gooey cheese inside.

Make sure you allow time for the puff pastry to thaw! You don’t want any cracks in your pastry dough.

Really, once you get the hang of it, it’s pretty easy to come up with your own custom creations or tweak the recipe to your preference. Variations I’ve made include swapping honey for jelly, adding fresh fruit, adding in roasted or raw nuts, and adding spinach!  Let me know if you have a favorite below in the comments!

Ingredients

  • 1 puff pastry sheet thawed (alternatively, use crescent roll dough and pinch together the seams to form one sheet)
  • 1 egg
  • ½ cup raspberry jam (or preferred flavor)
  • 1 Tbsp water
  • 1 lb brie cheese round
  • other toppings like chopped nuts, dried fruit, etc (optional)
  • other toppings: nuts dried fruit, etc.

Instructions

  • Defrost the frozen pastry sheet in the fridge. Or, if using crescent roll dough, pinch together all the seams to form one large rectangle and gently roll out to ensure it can cover the brie round.
  • Spread ⅓ of the raspberry jam across the puff pastry sheet, then sprinkle on any other toppings (nuts, dried fruits, etc.) Then place the cheese in the center and top with the remaining jam.
  • Gently fold the pastry up the sides, taking care not to rip the dough, and press all seams together, wrapping like a present.
  • Flip it over, seam side down into a baking dish, then brush with egg wash. Scramble the egg in a small dish and use a pastry brush to brush it over the top of the pastry dough.
  • Bake 30-45 minutes until golden brown and gooey. Cut open and allow to cool before serving (otherwise will be molten hot!)
