This was actually the first time that I’ve made risotto on my own! This was my last roommate’s go-to recipe when she wanted to cook, and let me tell you, it’s amazing. This is an awesome sidekick to a meal! It does take a long time, but not a ton of effort, just the checking every 15 minutes and flipping. Most of the work is upfront, and also works out well for a helper to make when you’re preoccupied with the main dish. Holy butter! This is a nice, clean, vegetarian recipe! It’s super easy to make, and would also make a great side, although we ate it as the main dish tonight. It is definitely a little on the light side for a main meal, but was still super tasty. It’s got a variety of vegetables and a nice Mediterranean flair. Here’s the twin to my previously posted recipe, jalapeno cheddar stuffed burgers, though they’d go great with honey mustard pretzel chicken tenders, or a chicken pesto burger. So many possibilities! But I will say these fries are a wonderful side. They’re not particularly work-intensive, but give you some fries in your own home. So we made individual garlic monkey breads as a quick side to caesar chicken tortellini the other other night! I’ve been cooking up a storm lately, so we’ve been eating leftovers out the wahzoo. They’re delicious, but they impede my cooking because I don’t want to waste food! I recently discovered that I don’t mind brussel sprouts. I honestly had never tried them before last year when I first made this recipe.
