Dice jalapeno and set aside. Reserve more seeds for spicier kick.
In a pan over medium-high heat, cook the bacon until crisp. Remove from pan to a paper-towel lined plate to drain.
Remove excess bacon grease from the pan, then add in corn. Toast 1-2 minutes until just beginning to brown.
Add in diced jalapenos and stir around to cook approx. 30 seconds
Add in cream cheese and stir around until evenly melted. Add in pepperjack cheese and stir to melt.
Remove pan from heat. Crumble bacon and add ⅔ directly to pan. Mix together until combined.
Remove to serving dish, and top with remaining bacon and scallions. Serve with chips or veggies.
