Assembly is key here--adding any acid (lemon, ginger beer) to the butterfly pea tea or syrup will cause it to immediately change color! First in a serving glass, muddle the mint. Use a muddler or flat end of a wooden spatula. Mash until the oils are released and some of the leaves are broken up. In the minty serving glass, combine 1.5oz whiskey (1 shot) and .75 oz honey jack (½ shot). Add the 2 Tbsp butterfly pea simple syrup and 4oz butterfly pea tea, roughly ⅓ cup.
In a separate small glass or container, combine the juice from ¼ lemon, and 2 oz ginger beer.
When ready for color changing magic, pour the lemon-ginger beer mixture over the top of the cocktail and watch the color change! Stir to complete the magic.
