Line a loaf pan with parchment paper and grease with cooking spray.
In a large bowl, mash the bananas, then add the following ingredients: ¾ cup coconut milk, ¾ cup brown sugar, 2 eggs, ¼ tsp cinnamon, ½ tsp salt, and 2 Tbsp honey.
Whisk together until smooth and creamy.
Mix in ½ cup oats, 2 cups flour, and 2 tsp baking powder. Fold to incorporate until evenly mixed.
Transfer batter into the prepared pan. Sprinkle the top with turbinado sugar if using.
Bake for 1 hour. Remove from the oven and allow to rest for at least 30 minutes or until cooled before slicing and serving.
Serve toasted or at room temperature. Consider serving with strawberry cheesecake sauce for a fun twist on dessert (combine pureed strawberries and sugar with cream cheese). Freezes well.
