Ingredients

  • ¾ cup full cream coconut milk
  • ¾ cup brown sugar
  • 2 eggs
  • ¼ tsp cinnamon
  • ½ tsp salt
  • 2 Tbsp honey (or substitute agave syrup or maple syrup for a vegan alternative)
  • 3 ripe bananas mashed
  • ½ cup quick cooking oats* (or coarsley chop old-fashioned oats in a food processor)
  • 2 cup flour
  • 2 tsp baking powder
  • turbinado sugar (optional, for sprinkling)
  • cup chocolate chips (semisweet preferred)

Instructions

  • Line a loaf pan with parchment paper and grease with cooking spray.
  • In a large bowl, mash the bananas, then add the following ingredients: ¾ cup coconut milk, ¾ cup brown sugar, 2 eggs, ¼ tsp cinnamon, ½ tsp salt, and 2 Tbsp honey.
  • Whisk together until smooth and creamy.
  • Mix in ½ cup oats, 2 cups flour, and 2 tsp baking powder. Fold to incorporate until evenly mixed.
  • Transfer batter into the prepared pan. Sprinkle the top with turbinado sugar if using.
  • Bake for 1 hour. Remove from the oven and allow to rest for at least 30 minutes or until cooled before slicing and serving.
  • Serve toasted or at room temperature. Consider serving with strawberry cheesecake sauce for a fun twist on dessert (combine pureed strawberries and sugar with cream cheese). Freezes well.
