Ingredients

cinnamon sugar tacos;

  • 28-30 wonton or dumpling wrappers (about ½-⅓ a package)
  • ½ Tbsp cinnamon
  • 3 Tbsp sugar
  • cooking spray

strawberry filling;

  • ½ lb strawberries hulled, and finely diced
  • 2 Tbsp sugar

apple pie filling;

  • 3 apples
  • 1 Tbsp cinnamon
  • 3 Tbsp sugar
  • juice from ½ a large lemon
  • 1 Tbsp butter
  • 1 tsp cornstarch
  • cooking spray

toppings;

  • serve with ice cream, whipped cream, sprinkles, caramel sauce, or preferred ice cream toppings

Instructions

cinnamon sugar tacos;

  • To make the cinnamon sugar, add ½ Tbsp cinnamon and 3 Tbsp sugar to a small bowl. Mix until combined.
    (If making apple pie filling, combine 1½ Tbsp cinnamon and 6 Tbsp sugar, and set aside half.)
  • If using round dumpling wrappers skip this step. If using wonton or square wrappers, use a cookie cutter or biscuit cutter to cut large ~3" circles from the dough. Lay aside.
  • Lay the wonton wrappers out in a single layer (this can be done in batches). Wonton wrappers are typically thinner than dumpling wrappers so I will double them up.
  • Turn over a muffin pan (or multiple) and spray the bottom generously with cooking spray. Arrange the wonton wrappers to form taco shells, by curving each wrapper into a shell and sandwiching between two muffin cups.
    (Alternatively, you can spray muffin tins and press the wonton wrappers into the concave side to make little bowls instead of tacos.)
  • Bake at 400°F for 5-10 minutes (dumpling wrappers are thicker and may take longer) or until ightly crisp and browned. Watch them closely as they can burn easily. I recommend placing each muffin tray on a sheet pan to make it easier to take in and out of the oven and catch any sugar so it doesn't burn in your oven.
    Mine take about 8 minutes in the oven at full temp, then I turned off the oven and let them sit for 10-15 minutes.

strawberry filling;

  • Hull and finely dice ½ lb of strawberries. Add to a medium bowl, and toss with 2 Tbsp sugar. Set aside.

apple pie filling;

  • Dice apples finely, and retrieve the set aside cinnamon sugar mixture from step 1 or mix together 1 Tbsp cinnamon and 3 Tbsp sugar and set aside.
    Add them to a pot over medium heat with 1 Tbsp butter. Add the reserved cinnamon sugar mixture or mix together 1 Tbsp cinnamon and 3 Tbsp sugar and add to the pot.
  • Heat a pot over medium heat and add 1 Tbsp butter. Once melted, add the apples, cinnamon sugar, and juice from ½ a large lemon and stir until coated.
  • Allow to simmer. You may add 1-2 Tbsp of water if the filling seems dry or the bottom is at risk of burning. Once apples are tender and no longer crisp, add 1 tsp cornstarch and stir to thicken.
  • Remove apple pie filling from the heat, and allow to cool.

toppings & tacos;

  • Fill each shell with apple pie or strawberry filling and top with caramel sauce, whipped cream, sprinkles, ice cream, or any other ice cream toppings you can think of. Consider setting out a taco bar for everyone to help themselves!
