Mix together 2 Tbsp cinnamon and 6 Tbsp sugar in a small bowl.
Spray one side of the wonton wrapper and sprinkle with sugar mixture. Approx. half the cinnamon sugar should remain.
Turn over two muffin pans and spray the bottom with cooking spray. Arrange the wonton wrappers to form taco shells and bake 5-10 minutes until crisp and slightly browned.
Remove from pan to cool. Spray the outside with cooking spray and sprinkle with remaining cinnamon sugar.
Chop apples into small cubes and add to a pan over medium heat. Add 1 Tbsp butter and 1 tsp. cinnamon and cook until soft. Add cornstarch to thicken the mixture if needed.
Remove apple mixture to a dish and mix in lemon juice. Add more as necessary.
Fill tacos with filling and top with caramel sauce and vanilla ice cream or any toppings as desired.
