Ingredients

  • 28-30 round wonton wrappers
  • 2 Tbsp + 1 tsp cinnamon
  • 6 Tbsp sugar
  • 3 apples
  • juice from ½ a large lemon
  • 1 Tbsp butter
  • 1 tsp cornstarch
  • cooking spray
  • caramel sauce/vanilla ice cream*

Instructions

  • Mix together 2 Tbsp cinnamon and 6 Tbsp sugar in a small bowl.
  • Spray one side of the wonton wrapper and sprinkle with sugar mixture. Approx. half the cinnamon sugar should remain.
  • Turn over two muffin pans and spray the bottom with cooking spray. Arrange the wonton wrappers to form taco shells and bake 5-10 minutes until crisp and slightly browned.
  • Remove from pan to cool. Spray the outside with cooking spray and sprinkle with remaining cinnamon sugar.
  • Chop apples into small cubes and add to a pan over medium heat. Add 1 Tbsp butter and 1 tsp. cinnamon and cook until soft. Add cornstarch to thicken the mixture if needed.
  • Remove apple mixture to a dish and mix in lemon juice. Add more as necessary.
  • Fill tacos with filling and top with caramel sauce and vanilla ice cream or any toppings as desired.
