Melt semi-sweet chocolate in the microwave or on in a double boiler. The texture should be thick but pourable. Depending on the brand of chocolate you may need to add cream to the desired consistency.
In a bowl, beat the butter for 1 minute, then add the sugars and beat until combined. Add in the eggs and vanilla and mix together.
Add the melted chocolate in a steady stream and beat until combined.
Add remaining dry ingredients on slow speed. Do not overmix.
Fold in peanut butter chips, reserving some for topping after baked.
Scoop approx. 2 Tbsp. of dough per cookie and lay on a baking sheet lined with parchment paper. Press down slightly on each ball.
Bake 10 minutes and press extra chips into the top as removed from the oven. Centers will be soft, but will firm up as they set.
