Ingredients

  • 1 cup buckwheat
  • cup dried fruit
  • cup mixed nuts and seeds
  • 1 Tbsp cocoa nibs
  • 2 Tbsp agave syrup
  • 2 tsp protein powder
  • 1 egg white

Suggested flavors:

  • chocolate protein powder walnuts, pecans, dried cherries
  • PB peanut butter powder cashews, pumpkin seeds, dried cranberries
  • vanilla protein powder cashews, macadamia nuts, dried pineapple

Instructions

  • Chop mixed nuts and dried fruit as needed.
  • In a bowl add together buckwheat kernels and chopped mixed nut and fruit mix.
  • Mix in protein powder and agave and mix until all ingredients are evenly coated.
  • Add in egg white and mix to coat.
  • Line a large loaf pan with parchment paper and spray or coat lightly with oil.
  • Press the mixture into the pan, making sure to pack it tightly.
  • Bake for 10-18 minutes or until golden brown. Remove from oven and allow to cool before slicing into bars. Suggest slicing while still a little warm.
