Core the apples with a spoon or other utensil, and cut slices from the center, making sure not to cut the bottom so that they stay together.
In a bowl, add the butter and brown sugar and microwave for 30 seconds. Pause to stir, and then microwave 30 seconds more if necessary. Remove and stir in cinnamon.
Place the apples in oven-safe dish and stuff the centers of each apple with two caramels, then top with the mixture.
Bake for 20-25 minutes. (Some apples may require longer or shorter baking times)
Remove from the oven and top with ice cream, drizzle with caramel, and sprinkle with cinnamon as desired. (NB - Ice cream may harden the caramel center.)
