Light and fluffy semolina flavored couscous with shallots

Ingredients

  • 2 shallots
  • 1 Tbsp butter
  • 3 cup vegetable/chicken stock
  • ¾ cup couscous
  • salt & pepper

Instructions

  • Peel and chop the shallots. Melt butter in a saucepan, add the shallots and let cook for 4-5 minutes until softened.
  • Add vegetable or chicken stock to the pan and top with a lid until the mixture comes to a boil.
  • Add the couscous to the boiling stock, cover, and set aside off the heat.
  • Add salt and pepper to taste and fluff before serving. If desired, add balsamic or other spices/seasonings to enhance flavor.
