Crush golden grahams into fine crumbs by hand or using a food processor.
Add crumbs to a medium mixing bowl, and break up any remaining large pieces.
Add the mini chocolate chips, salt, and marshmallow fluff. Optionally add the dehydrated marshmallows. Mix until well combined.
Roll the mixture into balls just under 1” in diameter. Take care not to compact the mixture too much to keep a pleasant chew. Place balls onto a parchment paper lined baking sheet.
Melt chocolate according to package instructions. Coat truffles with chocolate and then return to parchment lined cookie sheet.
Sprinkle immediately with any desired toppings, then let harden and enjoy!
