snickers brownie pie;

A peanut butter pie with a chocolate brownie base, topped with peanut butter fluff and a drizzle of caramel, peanuts, and chocolate.

Ingredients

brownie pie;

  • ½ cup unsalted butter , melted
  • 1 cup sugar
  • 2 tsp vanilla extract
  • ¼ tsp salt
  • ¼ tsp baking powder
  • 2 eggs
  • ½ cup cocoa powder I prefer dark chocolate or dutch processed
  • ½ cup flour (I use measure-for-measure gluten-free)
  • 1 9-inch pie crust (I use Trader Joe's gluten-free)

peanut butter filling;

  • 8 oz marshmallow fluff (I prefer 8oz, but can use one 7oz jar if preferred)
  • 1 cup smooth peanut butter

Instructions

  • Melt ½ cup butter in a medium bowl. To it, add 1 cup sugar, 2 tsp vanilla extract, ¼ tsp salt, and ¼ tsp baking powder. Mix together until thoroughly incorporated.
  • Make sure the butter is not too hot and add 2 eggs, and mix until combined.
  • Add in ½ cup cocoa powder and ½ cup flour and mix until thoroughly combined.
  • Pour the brownie mixture into your 9" pie crust. Bake at 350°F for 20-25 minutes or until a toothpick inserted in the center of the pie comes out clean.
  • Remove pie from the oven and allow to cool to room temperature.

peanut butter filling;

  • In a large bowl, combine 8oz marshmallow fluff and 1 cup smooth peanut butter. Fold together to desired consistency--I like to leave streaks of peanut butter throughout the mixture.
  • Make sure your pie is cool, then add the peanut butter filling on top of the brownie mixture. Use a spatula to help shape the pie as desired (I like the center to dome a bit).

chocolate caramel topping;

  • In a medium, microwave-safe bowl, add 20 unwrapped caramels. Add 2 Tbsp of milk and microwave in 30 second increments, stirring in between, until caramel is melted.
  • Add ½ cup of salted, shelled peanuts to the caramel, and mix until peanuts are thoroughly coated in caramel.
  • Pour the caramel mixture over the top of the peanut butter filling, using a spatula or spoon to spread out as desired.
  • Melt the chocolate candy coating in the microwave in 30 second stints, stirring between each until melted. Drizzle chocolate over top of the pie in your preferred pattern.
  • (Optional) Sprinkle with flaky salt for an extra dash of saltiness.
