easy fruit cobbler;

5 ingredients is all you need to make this delicious, easy fruit cobbler. The perfect happy ending to your meal or a long day, fresh fruit and whole grains will make this healthful dessert a staple (although I do recommend pairing with ice cream).

Ingredients

cobbler;

  • cup sliced or diced fruits (try peaches, strawberries, raspberries, or a blend of your favorite berries)
  • 1 Tbsp flour
  • 1 Tbsp sugar (try brown sugar for a heartier flavor--pairs amazingly with peaches)
  • ¼ cup pecans or other nuts, chopped (optional)

oat crumble;

  • ¼ cup oats (whole grain, or instant will work fine too)
  • ¼ cup flour
  • 1 Tbsp sugar (or brown sugar)
  • 2 Tbsp butter melted
  • ice cream or other toppings, for serving (optional)

Instructions

cobbler;

  • Slice or dice your fruit into roughly ½" chunks or slices and add to small bowl. If using optional nuts, roughly chop and add to the same bowl.
  • Add in 1 Tbsp flour, 1 Tbsp sugar, and toss until evenly coated.
  • Spread the fruit mixture evenly between two small ramekins.

oat crumble;

  • Melt the 2 Tbsp butter in a medium microwave-safe dish.
  • Add in the ¼ cup oats, ¼ cup flour, and 1 Tbsp sugar and use a fork to mix together until it holds together in clumps.
  • Top each ramekin with half the crumble mixture.
  • Place both ramekins on a parchment-paper lined baking sheet (if they're stuffed full they may bubble over), and bake 30 minutes.
  • Remove from the oven and allow to cool for 10-15 minutes before serving. Top with ice cream or other garnishes (chocolate sauce, sprinkles, etc.) if desired.
