Preheat your waffle iron, and prepare your waffle mixture according to instructions. Make sure to use cooking spray or butter on your waffle iron before each use to make sure those waffles come out clean!
Pour a spoonful or two of batter into the waffle iron. (This should be slightly less than half of what you'd use to make a full waffle normally).
Moving quickly, add a dollop of cheesecake filling on top, and spread it out slightly with a heat-safe spatula. Optionally sprinkle in some of your fruit filling if desired.
Quickly cover with another spoonful or two of batter and close the waffle iron. Allow to cook according to instructions on your mix, and I usually add a minute or two because of the wet ingredients stuffed inside. Remove when golden brown and repeat until remaining batter is gone.
Serve waffles with your favorite toppings--maple syrup or whipped cream, and make sure to spread any leftover cheesecake filling and sprinkle any remaining fruit over top!
