Equipment

  • waffle iron

Ingredients

waffles;

  • your favorite waffle mix, according to instructions (e.g. 2 cups Bisquick, 1 cup milk, 1 egg)
  • cooking spray

cheesecake filling;

  • 4 oz cream cheese
  • 2 Tbsp sugar
  • 1 Tbsp strawberry jam (or try subbing apple butter!)
  • ½ tsp lemon juice

strawberry fruit topping;

  • 1 cup strawberries, sliced
  • 1 Tbsp sugar
  • whipped cream

apple cinnamon fruit topping;

  • 1 apple, granny smith suggested
  • 1 Tbsp sugar
  • 1 tsp cinnamon
  • 1 tsp water

Instructions

cheesecake filling;

  • In a medium bowl, combine 4oz cream cheese, 2 Tbsp sugar, 1 Tbsp strawberry jam, and ½ tsp lemon juice. Mix until thoroughly combined. Feel free to taste test and add more jam or sugar if you like it extra sweet.

strawberry fruit topping;

  • Cut strawberries into slices or dice into small chunks and add to a medium bowl. Sprinkle with 2 Tbsp sugar, toss together until evenly coated and set aside.

cinnamon apple fruit topping;

  • Optionally peel 1 granny smith apple (or leave the skins on for extra nutrition). Dice into small chunks--the smaller, the faster they'll cook.
  • Add diced apple bits to a small pan together with 1 Tbsp sugar, 1 tsp cinnamon, and 1 tsp water.
  • Cook over medium-high heat, stirring occasionally to keep from burning. If the pan becomes dry, add more water, 1 tsp at a time. Cook until apples are soft and thoroughly coated and the cinnamon sugar mixture has become sticky. This usually takes 3-7 minutes depending on the size of your apples

waffles;

  • Preheat your waffle iron, and prepare your waffle mixture according to instructions. Make sure to use cooking spray or butter on your waffle iron before each use to make sure those waffles come out clean!
  • Pour a spoonful or two of batter into the waffle iron. (This should be slightly less than half of what you'd use to make a full waffle normally).
  • Moving quickly, add a dollop of cheesecake filling on top, and spread it out slightly with a heat-safe spatula. Optionally sprinkle in some of your fruit filling if desired.
  • Quickly cover with another spoonful or two of batter and close the waffle iron. Allow to cook according to instructions on your mix, and I usually add a minute or two because of the wet ingredients stuffed inside. Remove when golden brown and repeat until remaining batter is gone.
  • Serve waffles with your favorite toppings--maple syrup or whipped cream, and make sure to spread any leftover cheesecake filling and sprinkle any remaining fruit over top!
