Reserve one or two mint leaves for garnish. In a glass or shaker, add the remaining mint leaves and muddle using a muddler or flat end of a wooden spatula. Mash until the oils are released and some of the leaves are broken up.
Add 6oz lemon lime soda and 1 shot (1.5oz) white rum. Optionally add 2-3 tsp of liquid surrounding the kiwi bubbles for extra kiwi flavor. If using a shaker add ice and shake, otherwise stir together until combined.
Add 1 Tbsp popping kiwi and garnish with mint leaves and kiwi as desired.
